Rob Reiner’s unsurpassable 1989 hit cemented itself as the gold standard of romantic comedy films when it addressed the elephant in the room: “Can a man and a woman be friends without sex getting in the way?” The film stars Billy Crystal and Meg Ryan in the leading roles as friends trying to understand if the daily chemistry amounts to something more. Nora Ephron’s award winning screenplay additionally benefits from the decision to include actual couples describing their own love stories. Upon revisiting this essential tale of love and friendship, Tallulah pastry chef Charley Scruggs was particularly struck by how Sally’s orderly (and ordering) habits are evidence of her assertive, eccentric spirit. Sally is unwilling to bend her desires — or her desserts — to meet society’s standards.

Inspired by Sally’s romanticism, confidence, and preference for apple pie with strawberry ice cream, Scruggs’ “Faking It” modernizes a Valentine’s Day favorite, dark chocolate mousse, by pairing it with apple butter and strawberry compote. The resulting dish is sweetly familiar yet unpredictable, infusing the rich taste of chocolate with slightly bitter, sour, and smoky flavors. Sally might be neat, but this dessert is a little messy, a tribute to the unwieldy humor of the film itself — and for the extra crunch of a biting comedy there is a sprinkle of cocoa nibs on top.
